I didn’t know the answer until a few years ago. Mind you, I was already an avid gardener. But I had no way of knowing because I bought all my crops as seedlings.

When the spinach plant ages, it will stop growing leaves and grow a long, thick stem. This stem will produce green seeds along the spines of its shoots that look like little spiky balls. Leave the plant alone until the seeds have dried up. Then, pull them out and store them in a dry container. The best containers include brown envelopes, paper bags, and glass.

Most leafy plants and root plants grow their seeds the same way, including lettuce, carrots, and and beetroots.
